Cinnamon Sugar Blondies: A simple, gooey treat perfect for game-night with friends.
When my youngest left for college, the house felt too quiet and a little too tidy. In an attempt to bring back some of the chaos and noise, I decided to host a game-night with old friends. This wasn’t just any game-night, it was the first one where I finally dared to open up about my love for baking. That evening, I whipped up a batch of cinnamon sugar blondies, a treat reminiscent of the carefree days spent at college, rushing into the common room with warm, gooey parcels straight from our makeshift dorm oven. I always kept a stash of brown sugar and vanilla extract back then; they were my little secrets to transform any basic recipe into a crowd-pleaser.
As everyone gathered around the table, the smell of melted butter mingled with cinnamon wafted through the room, bringing smiles before a single bite. I lined the baking dish with parchment to ensure the blondies slid out effortlessly, a trick I had learned through trial and error during those late-night kitchen escapades. After sprinkling a sugary cinnamon topping over the thick batter, I baked them to a slightly crisp perfection. Remembering to let them cool before cutting was essential to get those clean, sharp edges—ideal for grabbing between turns during a friendly Scrabble duel. That night, laughter filled every corner of the house, and those blondies—sweet, comforting, and unexpectedly simple—were an instant classic among my friends.
