If sunshine could be served in a bowl, this would be it. It’s super creamy, light, fluffy, and oh-so-pillowy!
Basically, it’s equal parts tropical getaway and potluck superstar. No need to turn on the oven; just make a cloud of whipped topping to bring all the flavors together, and don’t even bother bringing out bowls and plates. Just dig in. It works; don’t ask how we know.

Hack it:
Use banana instant pudding mix to make it even more tropical.
Swap pecans for walnuts if that’s what you have at home.
Use coconut flakes instead of shredded coconut to add chunks of crisp texture.
Drizzle with toffee syrup before serving for an unexpected twist.
Leftovers:
Freezing isn't recommended, as the texture of the whipped topping and marshmallows can change.
Crush some vanilla wafers in the mixture to make a waffle pudding with any leftovers.
Add spoonfuls in between graham crackers to make sandwiches.

Ingredients

  • 1 (3.4-ounce) package vanilla instant pudding mix, or coconut cream instant pudding
  • 1 (20-ounce) can crushed pineapple, juices reserved
  • 1 (8-ounce) container imitation whipped topping, thawed
  • 2 cups mini marshmallows
  • 1 cup sweetened shredded coconut, optional
  • 1/2 cup pecans, chopped

Directions

  • In a large bowl, stir the pudding mix and the can of crushed pineapple with its juices together.
  • Gently stir in the imitation whipped topping, the marshmallows, the coconut, and the pecans.
  • Cover the bowl with plastic wrap, pressing the wrap to the mixture.
  • Chill for at least 2 hours and up to 4 hours.
  • Serve.
