Ingredients

  • 3 cups all-purpose flour, plus more, to taste, for dusting the pans
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups zucchini, grated
  • 1 cup walnuts, chopped

Directions

  • Grease two 8x4-inch pans, then using the extra flour, lightly dust the greased pans.
  • Preheat the oven to 325 degrees F.
  • Sift the remaining 3 cups of the flour, the salt, the baking powder, the baking soda, and the cinnamon together in a bowl.
  • In a separate large bowl, beat the eggs, the oil, the vanilla, and the sugar together.
  • Add the sifted dry ingredients mixture to the creamed mixture, beating well.
  • Stir the zucchini and the nuts into the batter until well-combined.
  • Pour the batter into the prepared pans.
  • Bake until a toothpick inserted into the center of each of the loaves of bread comes out clean, about 40-60 minutes.
  • Cool the loaves in the pan on a wire rack for 20 minutes.
  • Remove the loaves from the pans and allow them to cool completely.
  • Slice and serve.
