Double-The-Love Pancakes: Sheet pan ease with a double chocolate delight.
Graduation day always seemed like a far-off dream, until I found myself surrounded by stacks of books and the distinct smell of dry-erase markers filling the air. As I crossed that stage, a mix of emotions whirled around me. That evening, determined to make my mark in a different way, I ventured into the kitchen to whip up something memorable: Double-The-Love Pancakes. Their name came from an idea sparked by a double major—why not double the fun with a generous sprinkle of chocolate chips?
Gently folding those chips into the batter, I recalled a tip from my grandmother: 'Leave the batter a bit lumpy,' she always said. Her voice lingered as I spread the batter in a rimmed sheet pan lined with parchment, a trick she taught me to ensure easy removal. The pancakes baked into golden slabs of warmth, their aroma mingling with my future's uncertainties. As I dusted them with powdered sugar—a flourish of confidence—I knew these breakfast squares were meant to celebrate this milestone as much as nourish me for the journey ahead. Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1 cup milk
- 3 tablespoons vegetable oil
- 1 large egg
- 1/2 cup chocolate chips
- powdered sugar, optional, to taste, for topping
Directions
- Preheat the oven to 350 degrees F.
- Line a 9x13-inch rimmed baking sheet with parchment paper, leaving a 2-inch overhang, and lightly coat the parchment paper with nonstick cooking spray.
- In a large bowl, add the flour, the salt, the baking powder, and the granulated sugar and whisk to combine
- Add the milk, the vegetable oil, and the egg to the dry ingredients mixture and whisk until just combined. The batter should have some lumps.
- Spread the batter mixture evenly over the prepared baking sheet.
- Sprinkle the chocolate chips evenly over the top of the batter.
- Bake until the pancake springs back when touched and begins to turn golden in color, about 25-30 minutes.
- Transfer the baking sheet from the oven and allow the pancake to cool in the pan for 5 minutes.
- Using the parchment paper overhang, transfer the pancake from the dish and cut into squares.
- Dust with the powdered sugar and serve.
