Ingredients

  • 1 bagel plain, whole wheat, or everything
  • 3 tablespoons butter divided
  • 2 eggs
  • 2 slices bacon cooked
  • 1 slice American cheese
  • salt to taste
  • freshly ground pepper to taste

Directions

  • Slice the bagel in half lengthwise and evenly spread 2 tablespoons of the butter on the two cut sides.
  • Preheat a cast-iron skillet over medium heat.
  • Place the bagels, butter side down, into the skillet and toast until golden brown, about 3-4 minutes.
  • Remove the toasted bagels from the skillet and set aside.
  • Add the remaining 1 tablespoon of the butter to the skillet and allow it to melt.
  • Crack both eggs directly into the skillet and scramble.
  • Gently stir the eggs until not quite cooked to your desired doneness.
  • Place the cheese and bacon on top of the eggs and cook until the cheese is melted and eggs are fully cooked, about 2-3 minutes.
  • Place the eggs, bacon and cheese on the toasted bagel bottom and add the bagel top on top.
  • Serve!
