The Scoop
Old Faithful Chicken Skillet balances flavors with flair and is perfect for creating new beginnings in any kitchen.
The first time I made this Old Faithful Chicken Skillet, I had just moved into my first big city apartment. It was one of those tiny spaces with a creaky floor and paper-thin walls, but the kitchen had charm and a well-seasoned cast-iron skillet left by the previous tenant. Armed with two boneless chicken breasts, some dry white wine, and cremini mushrooms, I set out to create a comforting meal that could drown out the city's noise. I always keep shallots on hand to add a subtle sweetness, and a splash of heavy whipping cream always takes any dish over the top.
As I flipped the chicken breasts, getting them just the right shade of golden brown, it struck me how cooking could make a house—albeit a rented shoebox—feel like home. The aroma of the mushrooms browning in butter mingled with the dry wine and parsley created an evening of flavorful dreams. A tip I learned that night: let the mushroom sauce reduce slowly to avoid a runny mess. This simple trick transformed each bite into a velvety embrace. Garnishing with some lemon peel twists, not only for the zing but for whimsical aesthetics, was a playful touch that became a new tradition.
Reflecting on my urban adventure while savoring each forkful, I realized that Old Faithful Chicken Skillet would always remind me of beginnings and newfound independence. It was in the careful balancing of ingredients and timing that I found solace and confidence, knowing the dish would come together just as tenderly as friendships made over shared meals.
Ingredients
- 2 (8-ounce) chicken breasts, boneless and skinless, halved and flattened to 1/2-inch thickness
- 1 1/4 teaspoons kosher salt, divided
- 1 teaspoon black pepper, divided
- 1/2 cup plus 1 teaspoon all-purpose flour, divided
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 (8-ounce) package fresh cremini mushrooms, sliced
- 1/2 cup shallots, sliced
- 1/2 cup dry white wine
- 1/2 cup heavy whipping cream
- 2 tablespoons fresh flat-leaf parsley, chopped
- 1/2 teaspoon lemon zest, grated
- lemon peel twists, to taste, for garnish
Directions
- Evenly season the chicken halves with 3/4 teaspoon of the salt and 1/2 teaspoon of the black pepper.
- In a shallow dish, add 1/2 cup of the flour and dredge both sides of the chicken halves in the flour.
- In a large cast-iron skillet over medium-high heat, heat the olive oil until it is shimmering.
- Add the dredged chicken halves to the oil and cook, without touching, until golden-brown, about 4 minutes.
- Flip the chicken halves and cook until they reach an internal temperature of 165 degrees F and the juices run clear, about 2 minutes. Cook in batches, as needed, to avoid overcrowding the skillet.
- Place the cooked chicken on a paper-towel-lined plate and cover to keep them warm.
- In the same skillet over medium heat, melt the butter.
- Add the mushrooms, the shallots, the remaining salt, and the remaining black pepper to the melted butter and cook, stirring frequently, until the mushrooms are browned, about 5-6 minutes.
- Add the remaining flour to the mushroom mixture and cook, stirring frequently, about 1 minute.
- Add the wine to the mushroom mixture and cook, stirring frequently, until the wine has reduced by half, about 2 minutes.
- Add the heavy whipping cream, the parsley, and 1/2 teaspoon of the lemon zest to the mushroom sauce mixture and stir to combine.
- Serve the chicken topped with the mushroom gravy and sprinkled with the lemon peel twists.
