Party Potatoes

The Scoop

Creamy potatoes, tangy sour cream, and rich cream cheese hide under a buttery, golden breadcrumb topping, with a final hit of cheddar for maximum party appeal.
Hack it:
Add crispy bacon, caramelized onions, or sautéed mushrooms to the potato mixture.
Swap cheddar for Gruyère, Parmesan, or sharp white cheddar.
Stir in roasted garlic, smoked paprika, or a pinch of cayenne for extra flavor.
Mix fresh parsley, green onions, or extra chives into the potatoes.
Add crushed crackers, panko, or fried onions to the topping for even more crunch.
Make it extra indulgent with a layer of shredded cheese underneath the crumb topping.
Leftovers:
Shape the cold potatoes into patties and pan-fry until crisp and golden.
Use them as the filling for crispy potato croquettes.
Top with a fried egg and hot sauce for an easy breakfast.
Spread into a waffle iron and cook until the edges are deeply crisp.
Turn scoops of leftover potatoes into a quick shepherd's-pie-style topping for leftover meat or vegetables.
