It's chops, gravy, and an amazing side all in one dish! While it may take a little patience to wait for it all to roast, the results will stun you with its delicious flavor! Ingredients
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/2 teaspoons salt, plus more to taste
- 1/4 teaspoon pepper, plus more to taste
- 1 (14.5-ounce) can chicken broth
- 2 tablespoons canola oil
- 6 (3/4-inch-thick) pork rib or loin chops
- 6 cups potatoes, peeled, thinly sliced
- 1 medium onion, sliced
- paprika, optional, to taste, for garnish
- fresh parsley, optional, minced, to taste, for garnish
Directions
- Preheat the oven to 350 degrees F.
- Grease a 9x13-inch baking dish.
- In a small saucepan over medium heat, melt the butter.
- Stir in the flour, 1 1/2 teaspoons of the salt, and 1/4 teaspoon of the pepper until smooth.
- Add the broth and bring the mixture to a boil.
- Cook while stirring, until thickened, about 1 minute.
- Transfer the saucepan from the heat.
- In a large skillet, heat the oil.
- Add the pork chops and cook until browned on all sides, about 3 minutes per side.
- Season the pork with the salt and the pepper.
- Layer the potatoes and the onion in the prepared baking dish.
- Pour the broth mixture over the layers in the baking dish.
- Place the pork chops on top of the layers in the dish.
- Cover the baking dish and bake for 1 hour.
- Uncover and bake until the meat and potatoes are tender, and the pork reaches an internal temperature of at least 145 degrees F, about 30 minutes.
- Sprinkle with the paprika and the parsley.
- Serve.
