The Scoop

This grilled corn salad celebrates summer's sweetness with grilled corn, nuts, and herbs—a perfect nostalgic side for family gatherings.
I remember the summer I returned to my childhood home after years living in the city. Everything was familiar yet so distant, like wandering through a sunlit dream. That was the season of weekend barbecues with my siblings and afternoons spent reminiscing over family tales. My parents' garden, with its endless rows of corn swaying in the breeze, was the backdrop to our gatherings. Shucking corn on the porch with my father, I learned that a touch of char from grilling added depth to the kernels, bringing out their sweetness in a way that the big city could never capture.
During one of these gatherings, I decided to craft a dish that reflected both my newfound culinary skills and the warmth of home. The nuttiness of toasted walnuts paired unexpectedly well with the brightness of pickled onions, adding a crunchy twist to the salad. I’d toss in fresh herbs—which I kept aplenty, growing on the windowsill for easy access—to add a fragrant note. A splash of lime juice would brighten the dish, a tip my father swore by to awaken any fresh salad, and a drizzle of good olive oil tied everything together. Sharing bowls of this vibrant grilled corn salad became a testament to the comfort found in family and home.
To achieve the perfect texture, make sure to crush the nuts just enough for a crunchy bite without losing their unique flavor. And always taste for seasoning, because a little salt can make all the difference when pulling together this combination of flavors. These moments taught me that food is not just sustenance, but also a bridge to cherished memories.
