The Scoop

Creamy chicken, a golden crunchy topping, and just enough poppy-seed flair to keep things interesting.
Poppy Seed Chicken is the kind of casserole that feels effortlessly comforting: tender shredded chicken gets folded into a rich cream sauce, topped with buttery crumbs, and baked until bubbling and golden.
Cozy enough for a weeknight, polished enough for the dinner table!
Hack it:
Swap the cornflakes for buttery crackers, panko, crushed pretzels, or crispy fried onions.
Add shredded cheddar, Gruyère, or Parmesan to the topping for an extra-cheesy crust.
Stir chopped mushrooms, spinach, broccoli, or peas into the filling for a veggie boost.
Give the sauce more personality with Dijon mustard, smoked paprika, garlic powder, or a splash of hot sauce.
Swap the poppy seeds for toasted sesame seeds for a slightly nuttier twist.
Leftovers:
Spoon the creamy chicken into toasted croissants for an easy chicken melt.
Turn it into a filling for baked potatoes with extra cheese on top.
Toss it with cooked pasta for a creamy poppy-seed chicken pasta bake.
Use it as a filling for quesadillas with cheddar and green onions.
Spread it over toast and top with a fried egg for a very good savory breakfast.
Turn it into mini pastry pockets using puff pastry for an easy next-day appetizer.
