It was my last day at the office before everything changed. My transition from corporate life to the uncertain world of freelancing felt huge, and I decided a hearty casserole dinner was the perfect way to celebrate this leap. I still remember coming home, my head spinning with ideas and dreams. Out came the egg noodles and a quick raid of my kitchen revealed leftover pork tenderloin and a couple of cans of cream of mushroom soup. It was a meal born of spontaneity and adventure.
I'd discovered that adding a cupful of sour cream to the mix gives the whole dish a rich, comforting taste which perfectly complements the tender pork. Opting for frozen peas and carrots meant I could add some veggies without adding fuss. I remember stirring everything together, a whirl of cheese and garlic powder, feeling the anticipation of the meal ahead. Ingredients
- 1 (12-ounce) package egg noodles cooked
- 3 cups pork tenderloin cooked and diced
- 2 (10.5-ounce) cans cream of mushroom soup
- 1 cup sour cream
- 2 cups frozen peas and carrots
- 1 cup cheddar cheese shredded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- cornbread optional, to taste, homemade or store-bought, for serving
Directions
- Preheat the oven to 350 degrees F.
- Prepare a 9x13-inch baking dish with nonstick cooking spray.
- In a large bowl, add the pork, the cream of mushroom soup, the sour cream, the peas and carrots, the cheese, the garlic powder, the salt, and the pepper and stir to combine.
- Add the egg noodles to the pork mixture and stir to combine.
- Transfer the pork mixture to the prepared baking dish, spreading it out evenly.
- Cover the baking dish with foil and bake until it is heated through and bubbly, about 30 minutes.
- Serve with the cornbread.
