  • 3 tablespoons butter
  • 1 1/2 pounds red potatoes chopped
  • 1/4 cup fresh parsley minced
  • 2 teaspoons garlic minced
  • 1 1/2 teaspoons garlic salt with parsley flakes
  • 1/8 teaspoon black pepper
  • 8 large eggs
  • 3/4 cup extra-sharp cheddar cheese shredded

Directions

  • Preheat the oven to 400 degrees F.
  • In a 10-inch ovenproof skillet over medium heat, melt the butter.
  • Add the potatoes to the melted butter and cook, while stirring, until tender, about 6-8 minutes.
  • Add the parsley, the garlic, the garlic salt, and the black pepper to the potatoes and stir to combine.
  • Using the back of a spoon, make four wells in the seasoned potatoes.
  • Add 2 of the eggs to each of the wells in the potato mixture. Try to keep the yolks intact.
  • Bake until the eggs are just set, about 10-12 minutes.
  • Sprinkle the egg mixture with the cheese and bake until melted, about 1-2 minutes.
  • Serve immediately.
