Killer Breakfast Potatoes

The Scoop

These potatoes have mastered the breakfast trifecta.
Crispy edges, fluffy centers, and just enough seasoning to make you wonder why plain potatoes ever got invited to brunch.
Killer Breakfast Potatoes are ridiculously simple, but that final blast under the broiler gives them the kind of golden, crunchy finish that makes a plate of breakfast feel like a proper event.
Hack it:
Yukon Golds are great here, but russets will give you even crispier edges thanks to their higher starch content.
For extra-crispy potatoes, soak the diced potatoes in cold water for 15–20 minutes, then dry them very well before tossing with oil. Wet potatoes are the enemy of crunch.
Swap the paprika for smoked paprika, Cajun seasoning, or chili powder depending on how much personality you want at breakfast.
For a cheesy finish, sprinkle shredded cheddar or Monterey Jack over the potatoes right after broiling and return them to the oven just long enough to melt.
Turn them into a full breakfast by topping the potatoes with a fried egg, avocado, hot sauce, and a spoonful of sour cream.
Leftovers:
Breakfast Potato Tacos: Reheat the potatoes in a skillet until crisp, then tuck them into tortillas with scrambled eggs, cheese, and salsa.
Crispy Potato Cakes: Mash the leftovers roughly, mix with a little egg and cheese, form into patties, and pan-fry until golden.
Breakfast Quesadillas: Layer the potatoes with cheese and scrambled eggs between tortillas, then toast until crisp and golden.
