All-Aboard Morning Bake combines potatoes and cheese for a cozy, satisfying start.
When I first moved out of my childhood home, a cozy two-bedroom nestled in a quiet cul-de-sac, the mornings felt strangely empty. It was during that transition that I discovered the magic of breakfast bakes. One bright Saturday morning, surrounded by half-unpacked boxes, I decided to experiment. I had a old college microwave and a slightly unpredictable oven, but that didn’t stop me from craving something fantastic. Armed with a bowl of leftover mashed potatoes and a collection of cheese that survived the move, I began my culinary journey. Using sharp cheddar and creamy havarti, both of which I've come to adore for their comforting meltiness, I created a base that invited indulgence.
Ingredients
- 3 cups mashed potatoes cooked
- 3/4 cup whole milk
- 1 cup sharp cheddar cheese shredded
- 1/2 cup havarti cheese shredded
- kosher salt to taste
- black pepper to taste
- 2 cups spinach roughly chopped
- 8 slices thick-cut bacon
- 8 large eggs
- 1/4 cup basil leaves
- 2 tablespoons dill
- 3 tablespoons Everything Bagel seasoning homemade or store-bought
- crushed red pepper flakes to taste
Directions
- Preheat the oven to 400 degrees F.
- Grease a 9x13-inch baking dish.
- In a large bowl, add the mashed potatoes, the milk, the cheddar cheese, the havarti cheese, the salt, the black pepper and the spinach and stir to combine.
- Evenly spread the mashed potato mixture into the prepared baking dish.
- Use the back of a medium spoon to make 8 indentions in the mashed potato mixture.
- In a large skillet over medium heat, add the bacon and cook until crisp.
- Add a slice of the bacon to each of the indentions in the mashed potatoes.
- Transfer the mashed potato mixture to the oven and bake, about 10 minutes.
- Transfer the mashed potato mixture to a wire rack and individually crack the eggs onto the top of each of the bacon slices.
- Sprinkle the salt and the black pepper over the eggs.
- Transfer the egg mixture back to the oven and bake until the eggs are set to preference, about 10-15 minutes.
- Transfer the baked egg mixture to the wire rack and sprinkle with the basil leaves, the dill, the Everything Bagel seasoning, and the red pepper flakes.
- Serve.
