Need to get away? Now you can with this Getaway Salad! Okay, okay, this isn't exactly the same as handing you a plane ticket, but we think this fresh, crispy salad is the next best thing. Seriously! Having a bowl filled high with grilled chicken, fresh veggies, and sweet, juicy fruits will take your mind straight to the Carribean. And the citrusy dressing drizzled on top is a nice tropical touch. Eat it poolside with some fun, vacation-y music playing, and you'll be transported to the tropics in no time! Pack your bowl full of Getaway Salad! It's time for a sweet flavor escape!
Ingredients
For the dressing:
- 1/4 cup orange juice freshly squeezed
- 3 tablespoons white wine vinegar
- 1 1/2 teaspoons dry mustard
- 2 tablespoons sugar
- 1/4 teaspoon sesame oil
- 1/4 teaspoon kosher salt
- 3/4 cup canola oil
For the salad:
- 1 large bunch fresh romaine lettuce
- 1 pound chicken breasts boneless and skinless, grilled and sliced
- 1 (8-ounce) can mandarin oranges drained
- 1 sweet baby bell pepper diced or sliced
- 4 green onions sliced
- 1/3 cup fresh cilantro chopped
- 6-8 tablespoons dried cherries or dried cranberries
- black sesame seeds to taste, for topping
Directions
- In a blender, add the orange juice, the white wine vinegar, the dry mustard, the sugar, the sesame oil, and the salt and blend until the sugar dissolves.
- With the blender running on low speed, slowly drizzle the oil into the orange juice mixture and blend until just combined.
- Store the dressing in the refrigerator until ready to serve.
- Divide the lettuce between four plates.
- Top the lettuce with the grilled chicken, the mandarin oranges, the bell pepper, the green onions, the cilantro, and the dried cherries.
- Drizzle the salad with the dressing and sprinkle with the sesame seeds.
- Serve.
