Recipe Background

These whimsical homemade Pop-Tarts are nostalgic and easy, ideal for late-night baking adventures.
It was the summer after my sister and I moved into our first apartment. We were determined to make every day an adventure, even in our tiny kitchen. Hot afternoons often meant late-night baking experiments, and one evening, it was the nostalgia for childhood breakfasts that inspired our creativity. We always had a few jars of fruit jam hidden away, so I grabbed my favorite. Pre-made refrigerated pie crusts were a staple in our fridge, always ready to save the day. As we worked, I remembered a tip from a mentor: always let fruit-filled pastries cool for a bit to keep the filling intact.
The apartment quickly filled with the sweet, comforting scent of jam and pastry. My sister and I took turns rolling out the dough and crimping, giggling over mismatched shapes. As those homemade pastries baked to a golden-brown perfection, one thing was certain—we created something memorable. Once cooled, a drizzle of powdered sugar icing provided the perfect finish. For a bit of whimsy, we scattered colorful sprinkles on top, a reminder of carefree days.
In that cozy kitchen, we learned more than a recipe. I discovered the calming rhythm of cooking and the joy of shared meals. Those pop-tarts became more than just a treat; they became symbols of youth and independence. For anyone diving into this recipe, make sure to whisk that icing until it’s smooth as velvet. It's the magic touch that transforms this simple snack into something delightful.

Ingredients

For the tart:

  • 1/2 cup fruit jam of your choice
  • 1 tablespoon cornstarch
  • 1 egg
  • all-purpose flour to taste, for dusting a work surface
  • 2 (15-ounce) boxes pie crust pre-made and refrigerated

For the icing:

  • 1 cup powdered sugar
  • 1 tablespoon fruit jam of your choice
  • 1 tablespoon heavy cream
  • Sprinkles optional, to taste

Directions

  • Line a baking sheet with parchment paper, and set it aside.
  • Preheat the oven to 400 degrees F.
  • Mix the 1/2 cup of the jam with the cornstarch in a small bowl.
  • In another small bowl, whisk the egg.
  • Using the flour, lightly dust a large surface, then lay the pie crusts out.
  • Flatten the crusts evenly with a rolling pin.
  • Using a knife, cut off the excess to create two 9-inch squares.
  • Cut each square into 3 long strips, creating 6 total rectangles.
  • On each rectangle, add 1-2 tablespoons of the jam mixture on one end of each crust strip, leaving a little room around the edges.
  • Using the egg, brush a rectangle around the jam to seal the sides together.
  • Fold the dry end over the egg-washed end with the jam.
  • Using a fork, crimp the edges of all sides of each of the pop-tarts.
  • Transfer the pop-tarts to the baking dish and bake until golden-brown, about 15-18 minutes.
  • Allow the pop-tarts to cool for 5-10 minutes.
  • Whisk together the powdered sugar, the remaining fruit jam, and 1- 2 tablespoons of the cream, adding as much as needed to get the right consistency.
  • Spoon the icing over the top of each cooled pop-tart and decorate with the sprinkles.
  • Let the icing dry for a few minutes and serve warm!
