The Scoop

When the financial clock is ticking, and your bank account is screaming, this 5-ingredient ramen casserole completely understands the assignment.
We are officially closing the chapter on eating sad, dry noodles over the sink. Just combine literal instant ramen with shredded chicken, frozen veggies, and canned soup, and you get a warm, bubbly dinner that hits every single time.
It’s cheap, it requires zero brain cells, and it gives major culinary mastermind energy on a budget.
Hack it:
Fresh vegetables vs frozen: they are both winners in our book. Use what you have.
Use vegetable ramen, diced tofu, and a can of tomato soup, and you just made the perfect vegetarian version of this!
Controversial suggestion, but feel free to use crumbled cornflakes as a topping instead of breadcrumbs. It’s really, really good!
Add grated mozzarella to make it a bit fancier
Leftovers:
Transforming a solid casserole into a thick, hearty soup is the oldest trick in the book for feeding a crowd on a budget. Add cream, broth, and any extra vegetables you may have in your fridge, and simmer until thick and creamy.
Add a layer of cooked ground beef, top with cheese, and bake again until bubbly to stretch the meal for the next day or two.
