The first weekend after moving into my college dorm, a wave of homesickness hit me like a freight train. Amidst unpacked boxes and a newfound sense of independence, I craved something familiar. My dad's All-American Bacon Cheeseburgers popped into my mind, a staple at every family BBQ. I always loved how he mixed the beef with onion, ketchup, and Worcestershire sauce, the tangy aroma lifting my spirits even when Dad teased about my growing grill skills. I headed to the campus market, determined to recreate that taste of home in a place that was anything but.
The shared dorm kitchen was a mess of mismatched cutlery, but I found a decent bowl and got to work. Crumbling the beef over the mix felt therapeutic. I remembered watching Dad shape the burger patties with a precision I never quite mastered. Despite the modestly stocked pantry, I managed to find sharp cheddar and bacon, staples in my family's version. Ingredients
For the bacon cheeseburgers:
- 2 tablespoons onion finely chopped
- 2 tablespoons ketchup
- 1 clove garlic minced
- 1 teaspoon sugar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon steak sauce
- 1/4 teaspoon cider vinegar
- 1 pound ground beef
- 4 slices sharp cheddar cheese
- 4 hamburger buns split and toasted
- 8 strips bacon cooked
Optional toppings:
- lettuce leaves to taste
- tomato to taste, sliced
- onion to taste, sliced
- pickle slices to taste
Directions
- In a large bowl, add the 2 tablespoons of the chopped onion, the ketchup, the garlic, the sugar, the Worcestershire sauce, the steak sauce, and the cider vinegar and stir briefly to combine.
- Add the beef to the ketchup mixture by crumbling it over top, then mix it together until well-combined, and shape into 4 burger patties.
- Preheat the grill to medium heat. Add the patties to the hot grill and cook, flipping them once, until they reach an internal temperature of 135 degrees F for medium-rare doneness, 145 degrees F for medium doneness, and 155 degrees F for well-done, about 2-4 minutes per side.
- Add 1 slice of the cheddar cheese to each of the patties and allow the cheese to melt, about 1 minute.
- Transfer the burgers to the bottoms of the buns and top them evenly with the bacon strips.
- Serve with the lettuce, the tomatoes, the remaining onions, and the pickles.
