For the oat topping:
- 1/4 cup quick-cooking oats
- 1 tablespoon brown sugar
- 1 tablespoon butter melted
- 1/4 teaspoon ground cinnamon
For the muffins:
- 1 1/2 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 large egg lightly beaten
- 1 teaspoon vanilla extract
- 1 apple peeled, cored, and chopped
Directions
- Preheat the oven to 400 degrees F.
- Grease a 12-cup muffin pan or line the cups with paper liners.
- In a small bowl, mix 1/4 cup of the oats, 1 tablespoon of the brown sugar, the melted butter, and 1/4 teaspoon of the cinnamon together.
- In a large bowl, whisk the remaining oats, the flour, the remaining brown sugar, the remaining cinnamon, the baking powder, the baking soda, and the salt together.
- In a medium bowl, whisk the applesauce, the milk, the oil, the egg, and the vanilla extract together.
- Stir the applesauce mixture into the flour mixture until all the ingredients are moistened.
- Fold the apple into the batter.
- Spoon the batter into the prepared cups until they are about 2/3 of the way full.
- Sprinkle the batter with the oat topping.
- Bake the muffins until a toothpick inserted near the center comes out clean, about 15 minutes.
- Serve warm.
