The Scoop

Apple pie and bread pudding decided to team up, and honestly, we’re very glad they did!
Cubed buns soak up a sweet cinnamon custard before baking with layers of tender apples until golden and cozy. Finish it with a warm maple-cream sauce, and you’ve got an easy, crowd-friendly dessert that turns leftover bread into something seriously good.
Hack it:
Use brioche, challah, croissants, cinnamon rolls, or day-old French bread instead of buns.
Add raisins, dried cranberries, chopped pecans, or walnuts between the layers.
Swap some of the apples for pears for a softer, more delicate fruit flavor.
Add nutmeg, cardamom, ginger, or apple pie spice alongside the cinnamon.
Stir a little bourbon, rum, or extra vanilla into the maple-cream sauce.
Leftovers:
Reheat slices and top with vanilla ice cream for an instant apple-pie sundae.
Turn chunks into a breakfast parfait with Greek yogurt, apples, and toasted nuts.
Pan-fry slices in butter until crisp and serve like French toast.
Layer pieces with whipped cream and caramel sauce for an easy trifle.
Warm leftovers with a splash of milk or cream for an extra-soft pudding bowl.

Ingredients

For the bread pudding:

  • 2 cups milk
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 stick unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 teaspoon kosher salt
  • 2 medium apples, peeled and sliced
  • 10 regular-sized hamburger buns and/or hot dog buns, cut into cubes

For the sauce:

  • 1/2 cup sugar
  • 1/2 stick unsalted butter, melted
  • 1 cup heavy cream
  • 1/2 teaspoon maple extract, plus more, to taste
  • salt, to taste

Directions

  • Preheat the oven to 375 degrees F. Then lightly grease a 9x11-inch casserole dish with nonstick cooking spray.
  • In a large bowl combine the 1 1/2 cups of the sugar, the milk, and the eggs, whisking together until smooth.
  • Add the vanilla extract, 1 stick of the melted butter, 1/2 teaspoon of the kosher salt, and the cinnamon and mix to combine.
  • Add half of the bread cubes to the egg mixture and press them down until submerged. Then, add the other half of the bread cubes, gently pressing down to lightly moisten.
  • Spoon half of the moistened bread cubes into the prepared pan, then top with half of the apple slices.
  • Repeat this layering with the remaining bread cubes and the remaining apple slices.
  • Place the pan in the oven and bake for 1 hour until the bread pudding is slightly crispy on the top and lightly browned.
  • In a medium saucepan, combine the remaining sugar, the heavy cream, the remaining melted butter, 1/2 teaspoon of the maple extract, and the remaining salt.
  • Bring the sauce mixture to a boil, then reduce to medium-low heat. For 5-10 minutes, allow the sauce to gently boil until reduced slightly.
  • Taste and adjust with the extra maple extract and the salt as desired.
  • Remove the bread pudding from the oven and drizzle it with the maple-cream sauce.
  • Serve warm!
