Billionaire Bacon

The Scoop

Billionaire Bacon takes thick-cut bacon and gives it the full luxury treatment: a sticky brown sugar coating, cracked black pepper, and a hit of red pepper flakes that caramelize into a crisp, sweet-and-spicy crust.
It’s smoky, crunchy, unapologetically indulgent, and exactly the sort of bacon that mysteriously disappears before everyone else gets a piece.
Hack it:
Start the bacon in a cold oven. The gradual heat helps the fat render evenly while giving the sugar time to caramelize without burning too quickly.
Use a wire rack so the bacon cooks above the rendered fat instead of sitting in it, helping the edges turn beautifully crisp.
Press the sugar mixture firmly onto both sides of the bacon so it sticks while the slices cook. • Keep a close eye on the bacon during the final few minutes. Caramelized sugar can go from glossy and golden to burnt surprisingly fast.
Let the bacon cool for a few minutes before serving. The sugary coating continues to firm up as it cools, giving you that irresistible candy-like crunch.
For a milder version, reduce the red pepper flakes. For serious brunch drama, add a little extra.
Leftovers:
Billionaire Bacon BLT: Layer the bacon with lettuce, tomato, and mayo for a ridiculously upgraded classic.
Sweet & Spicy Breakfast Hash: Chop the bacon and toss it with crispy potatoes, onions, and a fried egg.
Bacon French Toast: Crumble it over French toast with maple syrup for the ultimate sweet-salty breakfast.
Billionaire Bacon Mac & Cheese: Stir chopped bacon through creamy mac and cheese for a smoky, caramelized twist.
