Ingredients

  • 2 cups fresh blueberries divided
  • 1/4 cup maple syrup
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract

Directions

  • In a small saucepan over medium heat, add 1 cup of the blueberries, the maple syrup, the water, the lemon juice, and the vanilla and stir to combine.
  • Simmer the blueberry mixture, while stirring occasionally, until the blueberries release their juices and break down, about 10 minutes.
  • Add the remaining blueberries to the compote mixture and cook, while stirring occasionally, until thick and jammy, about 8 minutes.
  • Serve.
