Bo's Enchilada Casserole

Time :50 minutes
Yield :10 servings

The Scoop

Enchiladas decided to skip the rolling and go straight for the casserole dish.
Layers of tender chicken, black beans, sweet corn, green chiles, tortillas, and plenty of melty cheese come together under a rich enchilada sauce.
It’s saucy, hearty, ridiculously comforting, and built for feeding a crowd without the tortilla-by-tortilla assembly line.
Hack it:
Swap the chicken for shredded beef, pulled pork, rotisserie chicken, or black beans for a meat-free version.
Add sliced jalapeños, poblano peppers, or chipotle peppers for extra heat and smoky flavor.
Stir cumin, smoked paprika, oregano, or chili powder into the filling for an extra flavor boost.
Add sliced olives, pickled red onions, or roasted corn between the layers.
Leftovers:
Turn a slice into a loaded breakfast plate with a fried egg and avocado.
Chop leftovers into a filling for quesadillas or burritos.
Use the casserole as the base for loaded nachos with extra cheese and jalapeños.
Layer a scoop over rice with fresh salsa and avocado for an easy enchilada bowl.
