The Scoop
Busy day? Soup can handle it!
This quick, hearty bowl combines savory ground beef, tender mixed vegetables, stewed tomatoes, and rich tomato sauce with a little onion-soup magic.
It comes together fast, tastes like it simmered much longer, and is exactly what you want when dinner needs to get itself together.
Ingredients
- 1/2 pound ground beef
- 2 cups water
- 1 (14.5-ounce) can of stewed tomatoes
- 1 (10-ounce) package of frozen mixed vegetables
- 1 (8-ounce) can of tomato sauce
- 1 (1-ounce) envelope of onion soup mix
- 1/2 teaspoon sugar
Directions
- In a saucepan over medium heat, cook the beef, breaking it into crumbles, until no longer pink, about 6-8 minutes.
- Drain the fat from the saucepan.
- Add the water, stewed tomatoes, mixed vegetables, tomato sauce, onion soup mix, and sugar.
- Bring the mixture to a boil.
- Reduce the heat to low and cover, allowing the mixture to simmer until the vegetables are tender, about 10-15 minutes.
- Serve.
