The Scoop

Butter cookies are proof that you don’tneed a long ingredient list to make something people mysteriously keep “just having one more” of.
These are tender, buttery, lightly crisp around the edges, and packed with vanilla flavor.
Pipe them into pretty little swirls, sprinkle with sugar, and suddenly a very simple cookie looks like pure bliss.
Hack it:
For the best piping texture, make sure the butter is softened but not melted. If the dough feels too stiff to pipe, let it sit at room temperature for a few minutes.
Swap some vanilla for almond extract for a bakery-style flavor. Even ¼ teaspoon makes a noticeable difference.
Add finely grated lemon or orange zest to the dough for a bright citrus version.
No piping bag? Scoop the dough into small balls and flatten them gently with a fork. Rustic counts.
For a chocolate version, replace 2–3 tablespoons of the flour with unsweetened cocoa powder.
Leftovers:
Cookie Ice Cream Sandwiches: Sandwich vanilla, chocolate, or coffee ice cream between two cookies and freeze until firm.
Butter Cookie Truffles: Crush the cookies and mix with softened cream cheese, roll into balls, and dip in melted chocolate.
Crunchy Dessert Topping: Crush a few cookies over yogurt, pudding, ice cream, or fruit for an instant buttery crumble.
Cookie Crust: Blitz leftover cookies into fine crumbs and mix with melted butter to make a quick crust for cheesecake or a no-bake pie.
