Crispy, sweet, and just a touch quirky, these Butterscotch Haystacks have their roots in my first move across town. It was an impulsive transition, driven by nothing more than a longing for a little more independence. Surrounded by boxes labeled ‘kitchen’ and ‘books,’ I found myself digging through the pantry for comfort food. What I found was an old, crumpled bag of crispy chow mein noodles and a half-forgotten stash of butterscotch chips. I improvised the rest and called it my moving-day treat. Melting those chips at half power was the trick I learned from an old roommate, making sure the chocolate remained creamy and smooth.
Ingredients
- 2 cups semisweet chocolate chips
- 1 1/2 cups butterscotch chips
- 5 cups crispy chow mein noodles
Directions
- Line a baking sheet with parchment paper.
- Place the chocolate chips and the butterscotch chips in a large microwave-safe bowl.
- Heat the chocolate and the butterscotch chips at 50% power for 1 minute.
- Stir and continue heating the chocolate and the butterscotch for 30 second intervals, stirring between each interval, until smooth.
- Stir in the noodles.
- Using a spoon or tongs, drop 15 scoops of the mixture onto the prepared baking sheet.
- Refrigerate the haystacks until set, about 10 minutes.
- Serve.
