It was a Saturday evening, and after the frenzy of unpacking, I craved something comforting but out of the ordinary. I spotted a jar of cocoa powder peeking out from a box labeled 'kitchen essentials,' and suddenly, a chocolate lava cobbler felt like the perfect choice to break in my new space. This particular recipe had been a favorite of mine, not only because it was rich and decadent, but also because it was wonderfully simple, fitting snugly into the limited pantry of a new home.
As I gathered ingredients, the melted butter added a familiar, velvety aroma to the air. Having a small carton of milk meant I needed to be precise. It was a moment of improvisation when I decided to toss in some chopped walnuts for a bit of crunch. The cocoa mixed with boiling water created this magical transformation as it baked. Ingredients
For the cake:
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup sugar
- 1 1/2 tablespoons cocoa
- 2 tablespoons butter melted
- 1/2 cup milk
- 1 teaspoon vanilla
- 1/2 cup walnuts optional, chopped
For the topping:
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1 tablespoon cocoa
- 1 cup water boiling
- vanilla ice cream optional, to taste, for serving
Directions
- Preheat the oven to 350 degrees F.
- Grease a 1 1/2-quart casserole dish or square pan.
- In a medium-sized mixing bowl, combine the flour, the baking powder, 1/2 teaspoon of the salt, 2/3 cup of the sugar, and 1 1/2 tablespoons of the cocoa.
- Stir in the melted butter, the milk, and the vanilla until combined.
- Stir in the walnuts.
- Spread the cake mixture into the prepared casserole dish.
- In another bowl, combine the remaining sugar, the brown sugar, the remaining salt, and the remaining cocoa.
- Sprinkle the topping mixture over top of the batter; do not stir.
- Pour the boiling water over top of the topping mixture; do not stir.
- Bake until the top of the cake is almost set, about 30 minutes. The cake will rise to the top and a pudding layer will form on the bottom.
- Serve warm with the ice cream.
