Crack Corn Salad

Time :10 minutes
Yield :6 servings

The Scoop

Sweet corn gets tossed with crispy bacon, cheddar, jalapeño, green onions, and a creamy homemade ranch-style dressing, then finished with fresh lime for a bright, tangy kick.
Crunchy, creamy, smoky, and just spicy enough to keep everyone coming back for another scoop.
Hack it:
Use grilled or charred corn for a smoky upgrade.
Add diced avocado, cucumber, or bell pepper for extra freshness and crunch.
Turn up the heat with extra jalapeño, cayenne, hot sauce, or Tajín.
Add fresh cilantro, parsley, or extra dill for a more herb-forward finish.
Stir in black beans for a heartier Tex-Mex-style salad.
Leftovers:
Spoon into tortillas with avocado and chicken or black beans for quick tacos.
Pile onto tortilla chips with extra cheese and bake for loaded corn nachos.
Fold into quesadillas with more cheddar or Pepper Jack.
Add to scrambled eggs for a smoky, cheesy breakfast.
Serve over greens with grilled chicken for a creamy corn salad bowl.
