Creamy Spinach Chicken is the dish that makes date nights sparkle.
My first date with Sam was one of those timeless moments when you just know you've met someone special. Knowing Sam loved creamy dishes, I decided to cook Creamy Spinach Chicken for our third date, securing my spot as the new rising star in his gastronomic world. A fridge stocked with fresh spinach and a trusty block of parmesan from the fancy cheese store down the street were key. I stirred the garlic into the heavy cream with care, knowing it was the make-or-break moment for this velvety sauce.
While the chicken sizzled, filling the kitchen with a savory aroma, I realized how thinly sliced chicken ensures even cooking. A well-heated skillet is your best friend, creating that golden crust without sticking. As I folded in the spinach, watching it gracefully wilt into the rich, garlicky cream, I knew this dish was about to make an impression. Additional thyme for garnish brought an earthy, fragrant finish that danced on the edge of creativity as well as our plates.
The result? Let’s just say dessert was overshadowed, and a second date (and fourth, fifth...) was quickly on the calendar. Sam still talks about that night as the one where he became convinced I had some culinary magic. To this day, Creamy Spinach Chicken serves as more than just a delightful recipe. It's the nostalgic kickoff of a relationship that keeps heart and home warm, even when things aren't perfectly seasoned.
Ingredients
For the chicken:
- 1 pound chicken breast, boneless, skinless, thinly sliced and halved
- 1/4 teaspoon salt, plus more to taste
- black pepper, to taste
- 1 tablespoon flour
- 2 tablespoons olive oil
For the sauce:
- 1 1/2 cups heavy cream
- 5 cloves garlic, minced
- 1/2 cup parmesan, shredded
- 4 cups fresh spinach
- 1 tablespoon fresh thyme, optional, for garnish
Directions
- Season the chicken with salt and pepper in a large shallow bowl.
- Sprinkle the flour over the chicken and dredge both sides of the chicken in it.
- Heat an empty, large, high-sided skillet over medium heat for 2 minutes.
- Add the oil to the heated skillet.
- Add the coated chicken breasts and cook on one side for 5 minutes without moving them.
- Flip the chicken over and reduce the heat to medium-low.
- Cook the chicken until an instant thermometer inserted into the thickest part reads 165 degrees F, about 5 minutes.
- Transfer the chicken to a paper-towel-lined plate.
- In the same skillet, add the heavy cream and the garlic.
- Bring the cream mixture to a boil over medium heat, scraping the bottom of the skillet to incorporate the bits left from cooking the chicken.
- Add the parmesan cheese to the boiling sauce.
- Reduce the temperature to medium-low and keep stirring the sauce until the cheese melts, for about 2-4 minutes.
- Add the spinach to the sauce and stir until the spinach begins to wilt and sinks into the sauce, about 1-2 minutes.
- Season the sauce with salt and pepper as needed.
- Place the cooked chicken into the sauce-filled skillet and spoon the sauce over the center.
- Sprinkle with the thyme and season with more salt and pepper as needed.
- Plate and serve.
