When dinner needs to feel a little special without requiring a reservation, this casserole delivers.
Date night means simple enough, but cozy so that you can truly enjoy each other’s company. This way, staying in feels like you got the best table in town. Plus, you can enjoy this meal in your underwear. Your call!
Hack it:
Add a few handfuls of spinach beneath the parmesan mixture for extra color and flavor.
Serve with roasted potatoes, pasta, or a simple green salad to round out the meal.
Use full-fat Greek yogurt instead of mayo to cut down on calories.
Leftovers:
Shred any leftover chicken and artichokes, then place them in dinner rolls to make mini sandwiches.
Or toss with cold rice and Italian dressing to make a quick rice salad.
Add a handful of black beans and cream, and turn the leftovers into a white chili that you will remember until next date night.
