Ingredients
- 6 large eggs
- 1/4 cup whole milk
- 1/4 cup ham cooked and diced
- 1/4 cup green pepper diced
- 2 tablespoons chives chopped
- 1/2 cup Mexican blend cheese shredded
- 4 English muffins toasted and buttered, for serving
Directions
- Preheat the oven to 375 degrees F.
- Spray a half sheet pan with nonstick cooking spray.
- In a medium bowl, whisk the eggs and the milk together until well-combined, about 2 minutes.
- Pour the egg mixture into the sheet pan and top with the ham, the peppers, and the chives.
- Bake the egg mixture until set and warmed all the way through, about 11 minutes.
- Transfer from the oven and evenly sprinkle the shredded cheese on top.
- Bake the egg mixture until the cheese melts, about 2 minutes.
- Transfer the egg mixture from the oven and cut it into squares.
