Ingredients

  • 2 large leeks very thoroughly washed
  • 2 tablespoons unsalted butter
  • salt to taste
  • freshly ground black pepper to taste

Directions

  • Remove the root ends and dark green tops of the leeks and discard them.
  • Cut the leeks into 1/2-inch slices.
  • Place the leeks in a bowl of cold water and let them sit for 5 minutes. The leek slices will float to the top while any sand will sink to the bottom. This is an essential step; leeks are notoriously dirty and you will want to make sure they are as thoroughly washed as possible.
  • Using a slotted spoon, transfer the leek slices to a colander and shake off the excess water.
  • In a large skillet over medium heat, melt the butter.
  • Add the leek slices to the melted butter and cook, undisturbed, until the bottoms turn a deep brown, about 8 minutes.
  • Flip the leek slices over and season them with the salt and the pepper.
  • Let the leeks cook undisturbed until brown on the bottom and tender, about 8 minutes.
  • Serve.
