Hosting a backyard barbecue for my neighbors seemed like a simple idea until I realized I barely knew any of them. Ingredients

For the dressing:

  • 1 1/2 cups mayonnaise
  • 1/4 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the salad:

  • 8 ounces small pasta
  • 1 (14-ounce) package coleslaw mix
  • 1 red onion finely diced
  • 1 English cucumber thinly sliced

Directions

  • In a large mixing bowl, whisk together the mayonnaise, granulated sugar, apple cider vinegar, salt, and pepper until smooth and well combined.
  • Cook the pasta to al dente according to the package instructions.
  • Drain the water and rinse the pasta with cold water. Set aside.
  • Add the cooked pasta, coleslaw mix, red onions, and cucumbers to the dressing mixture.
  • Toss to coat all the ingredients with the dressing.
  • Cover and chill for at least 1 hour and up to overnight.
  • Serve.
