Fluffernutter Cookies

The Scoop

Peanut butter, gooey marshmallows, and chocolate toffee were never going to behave themselves in a cookie.
These soft, chewy bars bring all the classic Fluffernutter energy with pockets of melted marshmallow and crunchy toffee in every bite.
Nostalgia, but with better texture!
Hack it:
Swap the chocolate toffee for peanut butter cups, chocolate chips, or chopped chocolate bars.
Add chopped roasted peanuts for extra crunch and a bigger peanut butter hit.
Sprinkle flaky sea salt over the top before baking to balance the sweetness.
Mix in crushed pretzels for a salty-sweet crunch.
Add a little cinnamon or espresso powder for a deeper flavor.
Drizzle the cooled bars with melted chocolate or peanut butter for an extra-fancy finish.
Leftovers:
Warm a square and serve with vanilla ice cream for an instant sundae.
Crumble over ice cream, pudding, or yogurt for a gooey cookie topping.
Sandwich two pieces around softened ice cream and freeze for homemade ice cream bars.
Chop into chunks and fold into a milkshake with peanut butter and chocolate.
Layer pieces into dessert jars with whipped cream and sliced bananas.
