Ingredients

For the salad:

  • 1 medium pomegranate halved
  • 2 pounds mandarin oranges peeled and strings removed, segmented, can substitute oranges or tangerines
  • 1 1/2 pounds seedless watermelon rinds removed, cut into bite-sized cubes
  • 2-3 kiwis peeled and sliced
  • 4 ounces blueberries
  • 4 ounces strawberries optional, hulled and halved
  • 1 cup mint leaves optional, loosely packed

For the dressing:

  • 1/4 cup honey
  • 1 1/2 tablespoons lime juice

Directions

  • Over a small bowl, take one of the halves of the pomegranate and, with the cut-side facing your palm and using the back of a spoon, smack the back of the pomegranate so the seeds are released into your hand. Repeat this with the other half.
  • Place the mandarin orange segments, the watermelon, the kiwis, the pomegranate seeds, the blueberries, the strawberries, and the mint in a large bowl and mix to combine.
  • Whisk together the honey and the lime juice.
  • Pour the dressing over the fruit mixture and lightly toss.
  • Serve.
