Ingredients
For the frito pie:
- 1 pound lean ground beef
- 1 white onion diced
- 1 (1-ounce) package taco seasoning plus the water called for on the package
- 1 tablespoon chili powder
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 1/2 cups tomato sauce
- 1 (15-ounce) can kidney beans drained
- 1 cup canned corn drained
- 4 cups corn chips
- 2 cups Mexican cheese blend shredded
Optional toppings:
- 1/4 cup green onions chopped
- jalapeños to taste, sliced
- cilantro to taste, chopped
Directions
- Preheat the oven to 350 degrees F.
- Grease a 9x13-inch baking dish.
- In a large skillet over medium-high heat, add the ground beef and the onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain and discard the excess grease.
- Add the taco seasoning packet, the called-for water, and the chili powder to the cooked beef and stir to combine. Bring it to a boil.
- Reduce the heat and simmer the beef mixture until it has thickened.
- Add the diced tomatoes with green chilies, the tomato sauce, the kidney beans, and the corn to the beef mixture and simmer, about 5 minutes.
- Evenly add the corn chips to the bottom of the prepared baking dish.
- Sprinkle 1 cup of the cheese over the corn chips.
- Even spread the beef mixture over the cheese and then sprinkle with the remaining cheese.
- Bake the frito pie until the cheese has melted, about 18-20 minutes.
- Serve the frito pie topped with the green onions, the jalapeños, and the cilantro.
