The Scoop

Cheeseburger flavors met crispy hash browns, and decided dinner needed a casserole!
Savory ground beef and onions get tucked under creamy mushroom sauce, then topped with buttery, seasoned hash browns and plenty of melted cheese for a golden, bubbling bake that’s pure weeknight comfort.
Hack it:
Swap the ground beef for ground turkey, pork, or a beef-and-sausage blend.
Add mushrooms, bell peppers, corn, or spinach to the beef layer.
Give it cheeseburger energy with chopped pickles, mustard, Worcestershire sauce, or burger seasoning.
Add bacon or crispy onions to the hash brown topping for extra crunch.
Bring some heat with jalapeños, hot sauce, cayenne, or crushed red pepper.
Leftovers:
Crisp slices in a skillet and top with a fried egg for an easy breakfast hash.
Chop the casserole and stuff it into tortillas with salsa and avocado for breakfast burritos.
Turn leftovers into loaded nachos with extra cheese, pickles, and burger sauce.
Use the beef and potato mixture as a filling for quesadillas.
Reheat and serve over a simple green salad for an easy next-day dinner.
