The Scoop

Hawaiian Chicken Skewers: A flavor-packed dish perfect for beach party vibes.
When my cousin Lisa decided to host a beach party to celebrate her new surfing gig, I knew I had to bring something that matched the tropical vibes. Enter Hawaiian Chicken Skewers, a dish inspired by the vibrant flavors of the islands and the laid-back atmosphere of our gathering. I remember standing in my kitchen, surrounded by freshly diced pineapple and boneless chicken, contemplating the perfect marinade. I reached for my trusty bottle of tamari and a jar of chili garlic sauce, both staples that bring a balanced kick to any dish. A splash of rice vinegar added a tangy twist that I knew would sing harmoniously with the sweetness of local honey and a squeeze of fresh lime.
After massaging the flavors into the chicken, I let them soak in overnight. The anticipation of seeing my family's reactions as I threaded those juicy bites with golden pineapple was exhilarating. The next day, amid laughter and sandy toes, I got the grill going, its sizzle sweetened by the marinade brushes I reserved for the end. One practical tip: always make sure to soak wooden skewers if you use them so they don't catch fire. As I served up those skewers, each bite brought a chorus of approval, proving that sometimes the simplest ingredients can evoke the strongest connection and the fullest celebration.
The best part? Watching new friendships spark as everyone reached for seconds, negotiating over the remaining skewers with playful banter. Those sticky, smoky, spicy-sweet bites became the culinary centerpiece of our day, bridging gaps and creating memories around an open flame. It was more than just food; it was about bringing people together in a moment that tasted as bright and refreshing as the ocean breeze.

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons low sodium tamari or soy sauce
  • 2 tablespoons chili garlic sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 3 tablespoons honey
  • 1 lime, juiced
  • 3/4 teaspoon smoked Spanish sweet paprika
  • 1/2 teaspoon kosher salt
  • 2 pounds of chicken breasts, boneless and skinless, cut into bite-sized pieces
  • 1 small pineapple, cut into 1-inch cubes

Directions

  • Whisk together the olive oil, the tamari, the chili garlic sauce, the vinegar, the honey, the lime juice, the paprika, and the salt.
  • In a resealable plastic bag, add the chicken pieces and the marinade mixture, reserving 1/4 cup of the marinade.
  • Seal and massage the bag to coat the chicken pieces evenly in the marinade.
  • Refrigerate the marinated chicken for at least 6 hours and up to overnight.
  • Preheat the grill to 400 degrees F.
  • Thread the chicken pieces and the pineapple onto metal or soaked wooden skewers.
  • Grill the skewers, flipping halfway through, until the chicken pieces are cooked to 165 degrees F internally, about 3-4 minutes per side.
  • In the last 1-2 minutes of grilling, brush the skewers with the reserved marinade.
  • Serve.
