The Scoop
A turkey veggie soup from first college apartment days with practical cooking tips.
The aroma of turkey veggie soup always transports me back to a chilly autumn afternoon during my sophomore year of college. It was the first meal I ever made in my very own off-campus kitchenette. With a roommate who adored simple, hearty meals and another who was obsessed with anything remotely healthy, I needed a dish that would satisfy both—and perhaps earn me a few extra chore-free weeks. Turkey veggie soup, with its comforting broth and colorful veggies, turned out to be the perfect choice. I remember sautéing chopped onions and celery in a comforting swirl of butter until the kitchen was filled with a warm, savory scent that seemed to anchor our tiny apartment in a big way.
Our small, shared space meant using frozen lima beans for the ease of storage, and the addition of leftover turkey for that delightful 'resourceful student' vibe. Stirring the pot as fragrant parsley danced at the edges, I realized that sometimes the simplest recipes, like this one, made with easy-to-find ingredients, are the ones that linger in the memory. A pro tip learned from a kind neighbor whose nose led her to our half-open window: always add the rice at the very end. This keeps it from becoming overly soft, maintaining that satisfying bite amidst the tender vegetables.
Every spoonful became a reminder of that pivotal year. It wasn’t just about surviving college life with grace and a flavor-packed meal; it was about the camaraderie and the little victories that seemed to simmer along with it. If sweet autumn days had a taste, they’d be full of turkey soup comfort and crunchy corn kernels.
