Ingredients

  • 4 cups beef broth
  • 2 cups water
  • 1 (12-ounce) package egg noodles
  • 3 cups leftover pot roast
  • fresh parsley optional, to taste, torn, for garnish

Directions

  • In a large soup pot, add the beef broth and the water and stir to combine.
  • Bring the broth mixture to a boil.
  • Add the egg noodles to the broth mixture and cook until al dente, according to the package directions.
  • Drain the noodles and return them to the soup pot.
  • In a microwave-safe bowl, add the leftover pot roast and its juices and microwave until warmed.
  • Shred the pot roast with two forks.
  • Add the pot roast and its juices to the noodles in the pot and stir to combine.
  • Serve sprinkled with the parsley.
