The Scoop

If comfort food had a love language, this would be it!
Husband’s Delight Casserole combines saucy ground beef, tender egg noodles, a tangy sour cream and cream cheese layer, and a blanket of bubbly cheddar.
It’s rich, cozy, ridiculously easy, and exactly the kind of dinner that makes a regular Tuesday feel worth staying in for.
Hack it:
Make it spicy: Add red pepper flakes, hot sauce, or a spoonful of Calabrian chili paste to the beef and marinara.
Go extra cheesy: Swap some of the cheddar for mozzarella for a stretchier, gooier topping.
Add some veg: Finely diced bell pepper, mushrooms, or spinach can disappear beautifully into the meat sauce.
Freshen it up: Serve with chopped parsley, scallions, or a simple crunchy salad to balance all that creamy richness.
Leftovers:
Crispy skillet pasta: Chop up a slice and pan-fry it until the edges get browned and crispy.
Stuffed peppers: Use the leftover casserole as a filling for halved bell peppers and bake until tender.
Garlic bread situation: Spoon reheated casserole over toasted garlic bread and top with extra cheddar.
Breakfast bake: Chop the leftovers, add beaten eggs, and bake until set for a seriously savory breakfast.
Freezer stash: Portion into individual containers and freeze for an easy comfort-food emergency.
