Recipe Background
Instant Pot Popcorn with coconut oil brings retro movie night vibes home.
Imagine my surprise when the kids finally asked to watch an old classic like 'Back to the Future' instead of scrolling through endless reels on their phones. I immediately agreed, as it was the perfect excuse to share my love for retro movie nights from my own childhood. In those days, we'd perch on the couch with a heaping bowl of popcorn, buttery and fresh. I wanted to recreate that feel, but with a twist thanks to modern technology. Pulling out the Instant Pot, I grabbed coconut oil from the pantry—something I love for that subtle tropical scent it adds.
While the nostalgic scenes of Marty McFly filled the room, I melted coconut oil and butter together using the 'sauté' function. Coating each kernel gave me a moment to think about how far we've come with simple comforts. The kids giggled and crunched as the familiar aroma wafted through, alluring in its simplicity. A small tip: keep the lid's valve on vent to avoid pressure build-up—learned that the crunchy way! As the kernels popped enthusiastically, the mix of movie magic and tasty nostalgia felt just right.
When we finally settled down with bowls in hand, I whispered the old habit of adding salt to taste. This little addition allowed each of us to perfect our bowl as Marty busted out his skateboard tricks. Despite our different generations, the shared experience made time travel seem possible. That night, surrounded by laughter and buttery fingers, I realized popcorn isn't just a snack; it's a bridge connecting then and now.
