They get their tenderness from an overnight soak in a brown sugar and soy sauce marinade, perfectly balanced with garlic and pepper. So, you end up with a caramelized exterior, a juicy center, and a massive smile on your face. 
Hack it:
A light brush of oil on the grill is better than soaking it, as it prevents sticking without burning.
Use oyster sauce instead of soy sauce for a deeper glaze and flavor.
Add a generous tablespoon of maple syrup to the marinade to make these extra sticky and irresistible.
Leftovers:
To reheat those properly, place them in a pan over medium heat and add a couple of tablespoons of broth or apple juice. Cover and let them steam-heat for about 5 minutes.
Shred any leftover meat and make quick pork fried rice.
Make pulled pork chop sandwiches by shredding the pork and simmering it in barbecue sauce. Pile onto buns with some coleslaw and prepare to be amazed!

Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 1/4 teaspoon pepper
  • 4 (8-ounce) pork loin chops, bone-in and 1-inch thick

Directions

  • In a bowl or shallow dish, combine the brown sugar, soy sauce, garlic, and pepper.
  • Add the pork chops to the mixture, turning them to coat.
  • Cover and refrigerate the bowl for at least 8 hours and up to overnight.
  • Grease the grill rack.
  • Preheat the grill to medium heat.
  • Drain the pork chops, discarding the marinade.
  • Place the chops on the grill and cook, covered, until the meat reaches at least 145 degrees F internally, about 4-5 minutes per side.
  • Let the meat stand for 5 minutes. Serve.
