Recipe Background
This KFC® Coleslaw Copycat is a tangy favorite, perfect when allowed to rest.
It was the summer before I started high school, and my dad decided it was time for me to master one simple dish that I could pull out whenever needed. On a balmy Saturday, he ushered me into the kitchen, declaring we would conquer the classic KFC-style coleslaw. Immediately, I was intrigued by his seemingly magical ability to transform humble cabbage and a punchy mix of apple cider vinegar and sugar into the creamy, tangy dish I loved. Finely chopping the cabbage with precision felt like creating a culinary masterpiece, while shredding carrots taught me the joy of turning familiar vegetables into something special. His hands showed me the right way to stir in the Miracle Whip and incorporate the celery salt, a trick to balance the flavors perfectly.
Each time we made it, Dad would insist on the secret of letting it rest in the fridge. He explained how it allowed the flavors to meld beautifully, making sure every bite was perfectly balanced and refreshing. It became our ritual every summer cookout, and even now, finely chopping onions reminds me of those weekends before high school. Somewhere along the way, my coleslaw became more than just a side dish. To me, it symbolizes connection, patience, and a bit of kitchen magic shared between father and daughter.
