Korean Beef and Rice

The Scoop

This Korean-inspired beef and rice combines browned ground beef with a glossy sauce of soy, brown sugar, sesame oil, ginger, and a little red pepper heat.
Spoon it over hot rice, scatter over some green onions, and call it a weeknight win!
Hack it:
Add grated fresh ginger or a splash of rice vinegar for extra brightness.
Add shredded carrots, mushrooms, spinach, or broccoli for more vegetables.
Swap the beef for ground turkey, chicken, pork, or crumbled tofu.
Finish with toasted sesame seeds, crushed peanuts, or cilantro.
Leftovers:
Turn the beef into lettuce cups with cucumber, kimchi, and sesame seeds.
Use it as a filling for Korean-inspired tacos with slaw and gochujang mayo.
Stir it into fried rice with an egg and whatever vegetables are in the fridge.
Add to noodles with extra sauce for a quick noodle bowl.
