The Scoop

Shrimp, crab, creamy cheese, Cajun heat, and a golden cracker topping? This casserole is bringing serious Louisiana energy!
Cream cheese and mushroom soup make the filling rich and silky, while rice, peppers, celery, and onion give it plenty of texture before everything gets baked under a crisp cheddar-cracker crust.
Hack it:
Add andouille sausage or crawfish for an even more Louisiana-style filling.
Swap the shrimp and crab for scallops, crawfish, or a mix of your favorite seafood.
Add corn, spinach, or diced tomatoes for more color and vegetables.
Finish with sliced green onions, parsley, hot sauce, or a squeeze of lemon before serving.
Leftovers:
Fold the filling into tortillas with extra cheese for seafood quesadillas.
Spoon onto toasted baguette slices for creamy seafood crostini.
Turn it into a creamy seafood pasta bake with cooked pasta and extra cheese.
Stuff into bell peppers and bake until bubbling and golden.
Serve over crispy hash browns or roasted potatoes for a seriously indulgent brunch.
