Many years later, I found myself recreating this ritual for my own family during our first beach vacation. Ingredients

For the lime sugar:

  • 1 lime zested
  • 2 tablespoons granulated sugar
  • flaky sea salt to taste
  • lime juice to taste

For the drink:

  • 1 lime quartered, plus more wheels, to taste, for garnish
  • 8 fresh mint leaves plus more, to taste, for garnish
  • 1 teaspoon granulated sugar optional
  • 1 ounce white rum
  • 1/2 ounce coconut rum
  • ice to taste
  • 1/4 cup canned full-fat coconut milk well-stirred
  • ginger beer to taste

Directions

  • In a medium shallow plate, add the lime zest, 2 tablespoons of the granulated sugar, and the flaky sea salt and stir to combine.
  • Pour the lime juice onto a shallow plate.
  • Dip the rim of the glass in the lime juice then into the lime-sugar mixture.
  • In a cocktail shaker or a glass jar, muddle 1 of the quartered limes, 8 of the mint leaves, and the remaining granulated sugar and muddle everything together to release the juices.
  • Add the white rum, the coconut rum, and the ice to the mint mixture and shake until combined.
  • Add the coconut milk to the rum mixture and shake to combine.
  • In the prepared glass, strain the rum mixture.
  • Slowly top the beverage with the ginger beer and gently stir to combine.
  • Garnish with the extra lime wheels, the lime-sugar mixture, and the extra mint leaves.
