The Scoop

These Mexican Scrambled Eggs blend eggs, beans, and cheese for a flavorful breakfast.
The first time I made Mexican Scrambled Eggs was during a spontaneous road trip to Baja California. My friend Jaime and I decided to escape the city chaos and embrace the warmth of the Mexican coast. We stayed at a small inn where the owner, Rosa, offered us a rustic kitchen in exchange for a few meals. I remember asking Rosa what her favorite breakfast was, and she simply smiled, pointing to a basket filled with fresh eggs, onions, and a can of diced tomatoes with green chilies.
Jaime and I set to work, excited to create something memorable. Whisking eggs as the sun peeked over the ocean, we melted butter in a pan, its scent dancing through the air. The trick, Rosa advised, was not to rush—avoiding overmixing allowed the eggs to hold their soft, fluffy texture. We layered the onions, tomatoes, black beans, and shredded Monterey Jack onto the eggs, watching the colors come alive in the pan. An excellent tip Jaime shared was to let the eggs rest off the heat, ensuring they set perfectly while maintaining their creamy allure.
These Mexican Scrambled Eggs captured the essence of our travels with each bite. The combination of silky eggs and the gentle heat from diced tomatoes made the dish unforgettable. The simplicity reminded us that sometimes, the best recipes come from cherished moments—like a sunlit morning overlooking the sea, crafting a meal with newfound friends.

Ingredients

  • 3 tablespoons butter
  • 8 eggs
  • 1/2 yellow onion, finely diced
  • 1 (10-ounce) can diced tomatoes with green chilies, drained well
  • 1 1/4 cups black beans, drained and rinsed
  • 1 cup Monterey Jack cheese, shredded

Directions

  • Melt the butter in a medium skillet over medium-low heat.
  • Whisk the eggs vigorously until they are completely uniform in color. This allows them to cook evenly, but also incorporates air into them which makes them fluffy. Add them to the skillet immediately.
  • Sprinkle the onion, the diced tomatoes with green chilies, the black beans, and the cheese over the eggs.
  • Leave the eggs untouched until they begin to set, about 45 seconds.
  • Use a silicone spatula to gently lift the lightly cooked parts of the eggs at the edge of the pan and fold them, allowing the uncooked parts to seep onto the pan to cook.
  • Fold the lightly cooked eggs and cook until no remaining sections are runny. Be careful not to overmix the eggs, only move them around as needed. If they are cooking too fast, decrease the heat to low.
  • Transfer the cooked eggs away from the heat immediately.
  • Serve.
