Ingredients
- 4 eggs
- salt to taste
- black pepper to taste
- 2 slices bread of your choice
- 2 slices American cheese
Directions
- Preheat a nonstick skillet over medium heat.
- In a bowl, add the eggs, the salt, and the black pepper and whisk until well-beaten.
- Pour the eggs into the hot skillet.
- Dip the bread slices into the egg mixture in the skillet, making sure to coat both sides, and then leave the bread slices in the eggs as they cook.
- Cook until the eggs are cooked through, about 3-4 minutes.
- Flip the egg-bread mixture so the bread slices are now underneath the eggs and cook until the bread is golden, about 1-2 minutes.
- Fold the overlapping edges of the eggs onto the bread slices so that only the bread is touching the skillet.
- Place 1 slice of the cheese on the eggs over each slice of the bread.
- Flip one slice of the bread onto the other so the eggs are folded in the center and the sandwich is closed.
- Slice and serve.
