Just like Mom used to make! Mom’s Chicken Orzo Salad is easy and quick to make, and it makes for a perfect summer lunch, dinner, or side dish. Refreshing arugula, bright and bursting grape tomatoes, and creamy goat cheese mingle with tender orzo and juicy grilled chicken for a hearty yet light meal. Mom’s Chicken Orzo Salad is anything but boring, so make sure you make enough for everyone!
Ingredients
- 1 1/4 cups orzo
- 3 cups chicken breast strips grilled and chopped
- 1 1/2 cups arugula trimmed
- 1 cup grape tomatoes halved
- 1/2 cup red bell pepper chopped
- 1/4 cup red onion chopped
- 2 tablespoons basil chopped
- 1 teaspoon oregano chopped
- 2 tablespoons red wine vinegar
- 1 tablespoon extra-virgin olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 6 tablespoons goat cheese crumbled, for topping
Directions
- Cook the orzo pasta according to package directions. Drain well.
- Combine the cooked pasta, the chicken, the arugula, the grape tomatoes, the red bell pepper, the red onion, the basil, and the oregano in a large bowl, tossing well.
- Combine the vinegar, the oil, the salt, and the black pepper in a small bowl, stirring with a whisk.
- Drizzle the vinegar mixture over the pasta mixture, tossing well to coat.
- Sprinkle the pasta with the cheese.
- Serve.
